Can there be accounts that don't need to use the accrual method....and your CoA(s) still be considered Accrual? or would it become a Modified Cash Method CoA?

I'm not an accountant, but my understanding is that the Accrual Method has to do with when incomes and expenses are recorded, so if you wanted to use the Cash Method with any incomes or expenses, then that would be a modified cash basis/method.
